6 Easy Holiday Recipes that will Stand out on your Festive Table
Buffalo Chicken Dip

“A perfect dish to serve as guests arrive!”
Ingredients:
● Two pounds of chicken tenderloins
● 32 ounces Buffalo sauce
● Cube of Philadelphia cream cheese
● Two bags shredded cheddar cheese
● One bottle ranch dressing
● Bagel chips
Preparation:
Take two pounds of chicken tenderloins and boil them in hot water for 15-20 minutes until they are all white. Drain the water and transfer to a pan large enough to handle all of the chicken.
Now, depending on your guests and how hot they like their Buffalo sauce, add approximately 32 ounces of the sauce to the pan and start cooking the chicken. As the chicken becomes more tender, begin pulling the chicken apart into small pieces.
After about 10-15 in the buffalo sauce, add a whole cube of Philadelphia Cream Cheese. Use the regular cream cheese and DO NOT, UNDER ANY CIRCUMSTANCES, USE ANYTHING LOW FAT! You can also add two bags of shredded cheddar cheese and one bottle of ranch dressing.
Keep heating for another 5 minutes and do not stop stirring. Each time, break the chicken into smaller pieces. Once complete, serve in a bowl with bagel chips for dipping.
Pickled eggs

Ingredients:
● 8 hard boiled eggs, peeled
● 15 ounce can of beets in liquid
● 1/2 cup white vinegar
● 1/2 cup white sugar
● 1/2 cup water
● 1/8 teaspoon black peppercorns (optional)
● Pinch of salt
Preparation:
In a saucepan, combine beets, vinegar, sugar, water and peppercorns. Bring to a boil and stir until sugar is dissolved. Pour over eggs. Cover and chill for 4 hours or overnight.
Poppy Seed Sandwiches

“This recipe from my mother-in-law is a family favorite. Easy to make and great for any gathering, especially when football is involved!”
Ingredients:
● 1/2 cup butter
● 2 tablespoon minced onion
● 2 tablespoons prepared mustard
● 1 teaspoon poppy seeds
● Sliced Swiss cheese
● Thinly sliced ham
● Buns (hamburger or slider buns work best)
● Aluminum foil
Preparation:
Melt butter. Stir in onion, mustard and poppy seeds. Spread inside top and bottom bun. Top each bottom bun with cheese and ham (2-3 slices), adding another piece of cheese on top. Cover with top bun.
Wrap each sandwich in foil, place in a single layer on baking pan. Bake for 10-15 minutes at 350°F, or until cheese is melted. Refrigerate any uneaten sandwiches – they reheat nicely!
Sweet Corn Spoon Bread

“This is a staple on our table at holidays! It’s a quick, easy and delicious twist on traditional cornbread that is a hit with the whole family! Add a can of diced green chilies to pair with your favorite chili.”
Ingredients:
● 1/2 cup butter, melted
● 2 eggs
● 1 can creamed corn
● 1 package corn muffin mix
● 1 can whole kernel corn
● 1 cup sour cream
Preparation:
Preheat oven to 350°F. Grease an 8-by-8 pan.
Combine corn, butter and sour cream in greased pan and stir together. Beat eggs in a separate bowl. Add eggs and corn muffin mix to the pan. Stir well
Bake for 45 minutes or until golden brown. Enjoy!
Impossible Pie

“Simple, beautiful and delicious! A Theiss family and East Texas tradition: The Impossible Pie. Impossible because it makes its own crust, no dough needed! So simple to make and bake. If you love custard and coconut you’ll love this pie!”
Ingredients:
● 2 cups milk
● 1 cup flaked coconut
● 4 eggs
● 1 teaspoon vanilla
● 1/2 cup flour
● 8 tablespoons butter, melted
● 3/4 cup sugar
● 1/4 teaspoon nutmeg, for top
Preparation:
Preheat oven to 350°F. Grease and flour an 8-9-inch pie plate.
In a blender or mixing bowl, add all the ingredients and roughly mix together. Use a short pulse if using a blender, or whisk by hand. Be careful not to over mix.
Transfer batter to the pie dish and sprinkle ground nutmeg on the top.
Place in the oven for around 45 minutes. The pie will have a slight wobble to the surface. That will set as it cools.
Allow to cool and refrigerate until completely chilled. For best results, chill overnight. The flavor settles over time and becomes even tastier!
Apple Sopapilla Cheesecake Pie

“My family and friends request this dessert year round but expect it during the holidays! It smells like Grandma’s house when you are preparing this dessert and makes you feel all warm and fuzzy inside when you eat it!”
Ingredients:
● 4 apples, peeled, cored and sliced. I use Honeycrisp, but any apple will do.
● 1/2 cup light brown sugar
● 2 teaspoons cinnamon
● 1 teaspoon nutmeg
● 2 (8 ounce) packages of cream cheese, room temperature
● 1 cup granulated sugar
● 1 teaspoon of Mexican or regular vanilla extract
● 1 can of crescent roll
● 1 sheet of puff pastry, thawed
● 1/2 cup butter, room temperature
● 3/4 cup granulated sugar
● 1 teaspoon cinnamon
Preparation:
In a medium saucepan take 2 tablespoons of butter and the apples. Toss with 1/2 cup brown sugar, 2 teaspoons of cinnamon and 1 teaspoon of nutmeg. Cook on medium heat until the mixture until softens. Sprinkle in 1 tablespoon cornstarch, stir and remove from heat.
In a small mixing bowl mix 3/4 cup granulated sugar, 1 teaspoon cinnamon and 1/2 cup butter. Make sure everything is well combined. Set aside.
In a separate mixing bowl, add the 2 packages of cream cheese, 1 cup granulated sugar and 1 teaspoon of vanilla extract. Beat together with mixer. Set aside.
Spray a 9-by-13 baking pan with nonstick spray. Unroll crescent roll, pressing to fit snugly into the pan. Top the crescent roll with the cream cheese mixture. Spread evenly. Top the cream cheese mixture with cooked apples. Spread evenly. Top with the puff pastry sheet. If needed, roll it out a bit to cover everything. Make a few slits in the top of the puff pastry. Dollop the butter/cinnamon mixture on the puff pastry. Bake about 30 minutes, or until golden brown on top.
